Summary
We are seeking a skilled night baker to join our Bread team at Red Hen Baking Co. In this role, you will be responsible for baking a variety of breads, ensuring that all products meet our high standards of quality and taste.
Hours
We are looking for someone that can work the evening bake shift. The evening bake shifts typically begin at 3:00 pm and are generally done by 1:00 am. This a full-time, year-round position. Bakers work 4, 10-hour shifts per week, which includes at least one weekend shift. It is ideal for new bakers to train on the day shift first; we call this our “forming” shift because that is the bulk of what is done during this shift. During the forming shift, bakers learn how to fold, shape and proof the dough. Once a new baker has a good grasp on what is done during the day, they will get trained in the oven room.
Responsibilities
Bread bakers at Red Hen are engaged in all aspects of making long-fermented bread from scratch. They become familiar with managing natural and yeasted pre-ferments, mixing and fermenting dough, hand-shaping loaves, proofing, scoring and baking bread in a hearth oven. Every Red Hen baker is required to learn the standards of quality that we expect and how to make bread that meets those standards. It is equally important that every baker achieves our standards of efficiency. Bakers at Red Hen are required to work cooperatively in a production level, team environment.
Specific duties
Mixing pre-ferments and final dough in a spiral mixer.
Portioning and forming dough into individual loaves.
Folding dough during bulk fermentation
Managing the proofing of formed loaves
Scoring and baking in a hearth oven
Operating the machinery involved in each of the above processes.
Performing all of the above in a team environment while meeting quality and efficiency standards.
Physical Requirements
Standing for the entire shift
Walking up to the equivalent of two miles per shift
Participating in procedures that require a high level of repetitive motion involving the hands, wrists, arms and back.
Lifting up to 50 lbs. repeatedly during the course of a shift

It is acknowledged that continued employment is contingent upon the baker’s ability to perform as required by the above outline.
Pay and Benefits
Bakers start at a training wage directly related to experience and move to a proficiency pay of $21.65. Pay is evaluated at several stages in the first year and then annually after that.
