Company description
Fable Farm Fermentory is a farm-based winery producing aged wines and vinegars, among other herbal elixirs. The fermentory is part of a larger family of organizations working together to steward farmland, develop rural businesses, and promote community experiences.
We are a congregation of farmers/growers, herbalists, chefs, winemakers and artists growing native to the foothills of Central VT. Fable Farm is a fermentory, a venue, and a culinary company providing farm fresh prepared foods for various cultural events held on the farm. In the fermentory we aim to procure living wines from local fruits, herbs, saps, and honey. In the kitchen we use fresh wholesome food sourced directly from our farm and partner farms. We host art events, theatre and live music for the public to enjoy the fruits of rural culture, and also host intimate private food experiences on the farm.
Internship description
We are hiring two “Farm Kitchen Apprentices” for the Fall Season, to join Sycamore, the Chef-in-Residence at Fable Farm for 2025, and a Professor of Food Systems at the Culinary Institute of America. This is an immersive opportunity for passionate cooks to deepen their skills in land-based cuisine, preservation, and community cooking.
Timing: Mid-August through Mid-October (2-month minimum commitment, possibility for more)
Schedule: Tuesday, Wednesday, Thursday, Saturday (~40 hrs/week), schedule to evolve with season
What You'll Do
- Support daily prep of seasonal produce, sauces, flatbread doughs, and ferments
- Help execute our large-scale event called “Feast & Field,” every Thursday
- Support occasional private dinners and events
- Collaborate on creative projects like fruit leathers, hot sauces, herbal salts, and vinegars
- Maintain a clean, efficient, and harmonious kitchen environment
- Fall Fruit Harvest and Pressing, mostly apples and grapes, plus other vineyard & cellar maintenance
-Optional: help with Monday garden harvest and land work
We're Looking For
- Intermediate culinary skill (some kitchen experience)
- Clear communication and ability to take direction
- Grounded, reliable work ethic with respect for both detail and pace
- Experience with fermentation, preservation, and farm-to-table cooking
- A team-oriented person who thrives in a creative, rustic, land-based kitchen
Compensation & Perks
- Pay based on experience and role ($15-20+/hr)
