Local Ocean Seafoods launched the 100% Fish Program early this year. Our goal is to become the leading 100% Fish restaurant in the U.S. through the development of seafood byproducts and processing side-streams into high-value commercial goods that drive revenue and sustainability.
Job description
Join the 100% Fish Program at Local Ocean Seafoods and lead a small team in upcycling seafood byproducts into high-quality products for people, pets, and plants. This is a hands-on, mid-level production leadership position requiring attention to detail, strong kitchen operations skills, and an interest in sustainability and culinary innovation. This position reports directly to the 100% Fish Business Innovation Specialist.
Essential Functions
While on shift, is responsible for the following:
Team Supervision
Supervise, train, and oversee a small production team
Ensure all safety and production standards are met by the team.
Lead the team in meeting production goals, timelines, and expectations
Write a weekly and monthly schedule for the team.
Manage day-to-day operations and inventory, including ordering and coordination with other departments.
Contribute to a positive, team-oriented environment by supporting colleagues and maintaining a collaborative spirit.
Product Development
Work closely with 100% Fish Manager to develop new products – including ideation, recipe development & testing, and quality control.
Develop standardized training protocols and SOPs (Standard Operating Procedures) to ensure consistency of the product.
Assist in recommending improvements to packaging, format, and general appearance of all 100% fish products.
Quality Assurance
Monitor preparation and techniques to ensure adherence to recipes, portion control, and food safety standards.
Perform regular tests and quality checks to ensure all production items meet the company’s high standards.
Ensure compliance with major allergen regulations, food safety, and sanitation guidelines.
Efficiency & Safety
Work efficiently to meet service demands without compromising quality.
Follow all safety and sanitation guidelines, including proper handling, storage, and labeling of ingredients.
Ensure all equipment is used safely and maintained in good working conditions.
Problem Solving
Quickly and effectively address any issues that arise during shift, including ingredient shortages or errors.
Collaborate with the rest of the team to troubleshoot and resolve recurring challenges, improving overall operations.
Expectations:
Effective communication with English- and Spanish-speaking coworkers
Strong knowledge of food safety and sanitation standards
Exceptional organizational skills and attention to detail
Demonstrated experience in a production capacity, ideally in food production
Ability to work efficiently in a fast-paced environment, handle multiple tasks simultaneously, and remain calm under pressure
Current Food Handler’s card (within 30 days of employment)•
Ability to lift and move heavy objects up to 50 lb. Prolonged standing, walking, bending, and lifting objects at a variety of levels
Benefits:
Schedule: Estimated 30 hours/week, part- to full-time, year-round for the right candidate
Pay Range: $20-25/hr DOE
