Sub Rosa Bakery is a craft centered, grain forward bakery and stone milling operation located in the heart of the historic Church Hill neighborhood of Richmond, VA. Our coffee program is also robust and we work closely with two local roasters to provide the highest quality coffee and espresso drinks possible.
Our produce and grain comes directly from farmers in the region and 100% of our pastries and bread are made from these grains that we freshly stone mill in house. We are part of a movement to recreate a local grain economy and are committed to offering the highest quality we can to our community.
Although we have been open since 2012, we were forced to close last November when the bakery suffered a fire. We are in the midst of rebuilding and are planning to reopen late November. We cannot wait to serve the neighborhood and beyond again as a communal gathering spot with the highest quality of baked goods and coffee possible.
Job description
This is a full-time Pastry Baker position. You will work closely with our team focusing primarily on croissant and related viennoiserie work, as well as assisting in some bread and baking tasks. You will learn about and be involved with the creative use of grains in an operation that uses freshly milled flour in all breads and pastries. Some previous experience and a positive attitude, with an ability to take initiative, is a must.
We also ask that you have a healthy curiosity and passion for regional, sustainable food systems and their relationship to community and culture. Holiday and weekend availability is required and we ask for a two year commitment at a minimum. Starting pay is guaranteed at $21.80/hour (this rate includes tip out). Start date for this position is not till on or after 11/10/25
The Pastry Baker role can be demanding as the work is done in a small space with a tight knit team; constant pursuit for excellence and careful attention to detail is required throughout the shift. All tasks are done with the aim to assist coworkers and facilitate a smooth workday for everyone while maintaining the highest standards in every aspect of the bakery. The goal at Sub Rosa is to produce a benchmark quality product efficiently and sustainably. Understanding the balance that must be maintained between careful attention and efficient pace is key.
Given that we are a very small team, we understand that our roles and responsibilities must integrate and overlap to create a healthy work environment, all while providing excellent food and service to our community.
Pastry Position Specifics:
Will train for eventual bread shaping assist and bake assist
Mix and laminate doughs, shape and proof pastries
Assemble tarts and other pastry specials
Mix non laminated doughs
Prep and cook fruits and veggies
Make various fillings for pastries
Maintain an organized, clear workspace
Must be able to regularly lift up to 50 pounds of flour
Learn how to apply knowledge of local grain and flour to products
Compensation
this position is: hourly, $20/hr +
