Madruga Bakery is a craft bakery and cafe located in Miami, Fl. Our foundation is a dedication to traditionally made, naturally fermented breads. We are stone milling whole grains in house, making a variety of healthful, delicious hearth loaves from fresh flours. We bring this commitment to ingredients and techniques into everything we do, offering a rustic line of croissants, cookies, cakes, sandwiches, and more. We put as much care into our service as we do our products, offering warm and genuine hospitality to our customers and staff.
Job description
We are seeking a passionate individual to lead our bread team.
We focus on high quality artisan bread, using a natural 'sourdough' starter and stone grinding our whole grain flour on our in-house mill. Milling allows us to experiment with flavors of heirloom varieties of wheat, and truly dive deep into the craft of baking from every angle.
We are seeking a head baker who has a keen interest in the arts of fermentation and bread baking. We work with wet doughs and a variety of flours. The ideal candidate has experience leading a team in mixing, shaping by hand, proofing and baking naturally leavened breads. We are seeking an experienced baker who understands how manage bakery production, and set up systems for the best time management and product.
Bread baking is a labor of love, and requires as early as 4 am availability. Weekends are required.

Compensation
this position is: salaried, $50,000 - $75,000
