We are building toward something ambitious: a bread program that stands among the very best in New York City. To do that, we are looking for an exceptional Overnight Baker who sees baking not just as a job, but as a craft, a responsibility, and a long-term pursuit of excellence.
This role is for a disciplined, thoughtful baker who thrives overnight, understands fermentation deeply, and wants to help shape a best-in-class bread operation through consistency, leadership, and care.
The Role
As our Overnight Baker, you will be a key pillar of our bread program. You will take ownership of overnight production, ensuring every loaf meets the highest standards while contributing to continuous improvement in quality, process, and execution.
You will work closely with production leadership to refine systems, uphold standards, and help build a culture of excellence in the bakery.
What You’ll Do
Own overnight bread production from mix through bake, ensuring consistency, quality, and efficiency
Execute and uphold standards for dough handling, fermentation, proofing, and baking
Make informed, real-time adjustments based on dough condition, temperature, and production variables
Set the tone overnight through organization, cleanliness, and calm leadership
Communicate clearly with daytime teams to ensure smooth handoffs and continuity
Contribute ideas that improve product quality, workflow, and repeatability
Maintain rigorous food safety and sanitation standards
Who You Are
An experienced professional baker with a strong foundation in naturally leavened and yeasted breads
Comfortable taking ownership and working independently overnight without sacrificing quality
Highly detail-oriented, with a deep respect for fermentation and process
Calm under pressure and steady in execution
Motivated by excellence and excited to help build something lasting and respected
Physically able to meet the demands of professional bread production
