Marzae was founded in 2023 by husband and wife team Eliot Martin & Katie Luczai to produce exceptional wine that explores the potential of our region while enhancing ecological health, enriching local foodways, and building community around shared passion and experiences. We're Massachusetts' first & only natural winery, host Massachusetts' natural wine fair focused on promoting regional producers--MASSeration, and in 2026 are introducing our tasting room concept at Boston Public Market (Marzae Cellar + Provisions) + launching our non-alcoholic brand (Off Piste Ferments).

Key elements of the concept include chef-driven seasonal local small plates in both a full service dining model and casual counter service taproom experience, regular community event programming, and retail offerings including our alcoholic and non-alcoholic offerings by the bottle or sustainable refillable growler program + a curated selection of products from our favorite regional producers.
Job description
We're looking for more of a partner than employee for this chef position--someone who's interested in joining long term and bringing their unique perspective to build the food program from the ground up into something special that resonates with our brand values and customers. We have concept menus, details on the space, and more employment information we can share with interested chefs.
Generally speaking we're planning a 24-seat full service dining a la carte + prix fix concept, a 60-seat all day casual counter-service concept, and weekend brunch service. Kitchen facilities are ventless (no fryer or open flame) and designed for a 3-person kitchen team. Food wise we're looking at small plates with a zero waste approach, seasonal local and responsibly sourced ingredients, fermentation and preservation forward, great wine pairings, etc.
Core Responsibilities and Expectations:
- Achieving and maintaining financial targets set by the CEO, including best-in-class cost minimization and revenue maximization through price strategy, maximizing turns and covers, and achieving pre-defined profit margins.
- Consistently turning out exceptional, creative, and evolving, well-received food that is supportive of Marzae's brand and marketing efforts.
- Developing food concepts consistent with brand values and supplemental to beverage offerings—zero waste, seasonal local and responsibly sourced ingredients, fermentation and preservation forward, great wine pairings, etc.
- Maintaining consistency while driving sales across different concepts (i.e. counter service lunch and dining room menu, Kitchen Counter + Lounge Menu, paired menus, brunch, etc.).
- Effective communication within and across teams.
Growth mindset and dedication to fostering a positive working environment.
- Exceeding applicable regulatory compliance and operational standards of excellence.
Managing staff to foster independence and high service standards.
- Creative autonomy and menu ownership—we want to create a collaborative environment where there’s openness to collective ideation around menu concepts. Primary menu decisions rest with the Chef, subject to alignment with brand, budget, and profitability targets.
- Budgetary ownership—All day-to-day financial decisions and purchasing must be executed within a pre-approved budget. Larger purchases (i.e. capital purchasing) and strategic retail item ordering require consultation with and final approval from the CEO. Retail item ordering should include consultation with front of house to maximize ordering efficiency (i.e. local cheeses, condiments, etc. that are or can be packaged for resale).
Compensation
this position is: salaried, varies DOE, $80,000.00 - $110,000.00
