Le Croissant is an Americanized French bakery located in downtown Logan, Utah (not far from the Idaho border!). We bake artisan breads and pastries from scratch daily using exclusively certified organic flour and are committed to local sourcing.
The Le Croissant Manufactory is our production facility that mixes, laminates, forms, and bakes all bread & pastries for Le Croissant’s restaurant location, booth at the Cache Valley Gardener’s Market, and fulfills custom and special orders on a rolling basis. Additionally, we wholesale through partnerships with local businesses.
Job description
The Assistant Production Manager is a newly created position to support the rapid growth of Le Croissant. They will work with upper management to support the daily operations of the Manufactory, ensure consistent product quality, efficient production, and maintain a positive and safe work environment. This role blends hands-on baking with leadership and organization. The ideal candidate is detail-oriented, a team player, and passionate about local sourcing and artisan baking.
Quality Control & Production (40%)
This position will work with Bread and Pastry Production Leaders to:
- Successfully fill all orders & troubleshoot logistical problems.
- Anticipate ingredients needed for standing menu items & specials.
- Implement production of new specials to quality standards.
- Scale & troubleshoot recipes with technical accuracy.
- Compile dough needs and produce daily mix sheets.
Team Management (30%)
This position will play a major role in supporting the Bread and Pastry Teams, including but not limited to:
- Being the go-to for covering call-ins, covering shifts personally or making an effort to get them covered.
- Support team scheduling.
- Monitor and enforce Le Croissant’s policies, including attendance, dress code, and food safety compliance.
- Support team member evaluation by recording, scheduling, and conducting performance reviews and making corrections in partnership with the Production Manager.
- Co-facilitate quarterly Team Meetings in partnership with the Production Manager.
General Operations & Administration (30%)
The Assistant Production Manager will support facility maintenance, oversee food safety plan compliance, ensure operational security, and receive professional development to support these efforts. During scheduled shifts, this position is expected to be available during business hours to:
- Receive, process, & schedule special orders with accuracy and clarity as received.
- Communicate with wholesale and special order customers with timeliness, accuracy, and exceptional customer service as needed.
- Ensure outgoing orders are timely and accurate.
- Place and receive orders for supplies and ingredients, including from broadliners, our millers, and local farms.
- Answer questions from staff and contact upper management/ownership if necessary or further support is needed.nStep in to support dish and other production roles as needed.
Minimum Requirements
- Available consistently on weekends, including Sundays.
- Ability to lift 50# and stand/walk for up to 8 hours.
- Proficient in all bread & pastry production shifts (training will be provided as necessary).
- Valid Utah Food Handler’s Card & Food Safety Manager’s Certification (the latter can be acquired after accepting the position).
- Comfort working with Gmail, GoogleDrive and Microsoft Excel.
- Experience working with Square a plus.
- Strong communication skills.
- Flexibility and enthusiasm for change.
Compensation & Benefits
Le Croissant is a small business growing fast. We work to constantly assess and reinvest in the business and our employees who help us achieve success.
This position is non-exempt and scheduled for 32+ hours per week, with occasional overtime. Hourly wage is ~$20/hour, DOE, with room to grow.
