Beetlebung Farm is a 6 acre property in the heart of a small, rural beach town on the island of Martha’s Vineyard. As a farm, we prioritize soil health by operating a no/low-till diversified vegetable system relying on cover cropping, fungal based nutrient sprays, beneficial insects and other regenerative forms of fertility, pest and disease management.
We grow a (very) wide diversity of crops, striving to bring interesting, forgotten, unique, and delicious plant varieties to our market. Why? Simply, we love food- from the growing to the experimentation, the cooking to the sharing and engagement with our customers. It’s our passion and we feel extremely lucky to operate in a community that supports this approach and ethos to agriculture. Currently, we sell our produce primarily through our brand new, year-round farmstand and also seasonally at the weekly West Tisbury Farmers Market and at select restaurants on the island.
In late 2024, Beetlebung Farm completed its three year project of (re)constructing an historic agricultural barn on the property. This space represents the culmination of much hard work, craftsmanship, and collaboration. The barn houses the farm’s year-round retail farmstand, wash pack, a commercial kitchen, a stone mill and a whole grain bakery. We are crazy excited about these spaces and their potential to feed and inspire our community.

Job description
Beetlebung Farm is seeking a Pastry Lead to work in close partnership with our Head Baker, and collaboratively with our Culinary Director, within our 100% whole grain, freshly milled, unsifted bakery program.
Grain is at the heart of our work. We believe flour is agricultural, not industrial. We care deeply about where grain is grown, who grows it, how it is milled, and how those decisions shape flavor, nutrition, and community.
We are seeking someone who either shares this commitment or is eager to deepen their relationship to grain and fermentation within a farm-based ecosystem. This is a hands-on production role with leadership expectations. As our culinary program grows, there will be opportunities to contribute to farm dinners, tastings, and educational programming.
Position Overview
The Pastry Lead executes daily pastry production, manages pars and workflow, upholds quality standards, and supports both pastry and bread production as needed. This role helps set the tone for professionalism and care within the bakery.
Production & Execution
● Execute daily pastry production according to pars and seasonal needs set by the Head Baker.
● Uphold BBF recipes and techniques with consistency and precision.
● Demonstrate strong foundational and refined pastry techniques (laminated doughs, custards, cakes, fruit work, fillings, etc).
● Support whole grain bread production when needed.
● Maintain a clean, organized, and efficient workstation.
● Properly label, date, store, and rotate product in compliance with food safety standards.
Collaboration & Communication
● Collaborate with the broader kitchen team to ensure pastry offerings reflect seasonal harvest and complement savory production.
● Communicate proactively regarding prep needs, inventory, workflow challenges, and supply concerns.
● Participate in flavor development conversations tied to farm cycles.
● Support farm events, tastings, and community programming.
Leadership & Standards
● Model professionalism, urgency, pride, and attention to detail.
● Maintain daily production timelines and weekly task lists.
● Assist in training and mentoring junior staff.
● Reinforce standard operating procedures for production and sanitation.
● Leave every space better than you found it.
Requirements
● Minimum 5 years of professional pastry experience.
● Minimum 2 years in a senior or leadership production role.
● Strong understanding of classical pastry techniques and naturally leavened dough systems.
● Ability to manage multiple production streams while maintaining consistency.
● Working knowledge of Massachusetts Board of Health standards and food safety regulations.
● Ability to stand for extended periods and lift up to 50 lbs.
● Professional speed and accuracy consistent with artisan production.
● Reliable, accountable, and aligned with a team-based culture.

Compensation
this position is: salaried, varies DOE, $60,000.00 - $65,000.00
