Company description
Founded in 2012 by siblings Evin and Evrim Dogu, Sub Rosa Bakery has gained acclaim for its dedication to traditional baking methods and use of organic, regional, and heirloom grains. The bakery specializes in naturally leavened breads and pastry, including rotating seasonal options. Sub Rosa Bakery's milling operation, known as Sub Rosa Mills, is integral to their commitment to traditional, sustainable baking practices. Sub Rosa sources its grain from Virginia and Pennsylvania, fostering direct relationships with local farmers to ensure quality and sustainability. The bakery offers a full espresso menu and collaborates with two local roasters, Afterglow Coffee Cooperative and Recluse Roasting Project, both specializing in transparent sourcing and high-quality roasting. This partnership allows the bakery to deliver a thoughtful, seasonal coffee program that complements its pastry menu.
