Pizzaiolo is one of the many children of Chez Panisse. It was started in 2004 by Charlie Hallowell after working in the kitchen at Chez Panisse for over a decade. Pizzaiolo has been one of the top restaurants in the Bay Area for over 20 years. We like to think of it as a deeply traditional Italian restaurant with a heavy dose of Otis Redding and Tribe Called Quest. We change the menu daily, we buy 90% of the food we serve from small local farmers, and we deeply believe in the importance of the mealtime ritual. We make all of our pasta in house, we have a beautiful wood fired oven, and whenever possible (most of the time) we buy whole animals… We are not a fancy restaurant, but we are committed to a high level of craft and we are disciples of the sensual experience… we cook real food, mostly without recipes. We shop at 3 farmers markets a week, we buy the best product, and we try hard not to mess it up…. We are more interested in the food leading the way, as cooks we are in service to it, not the other way around… at pizzaiolo the hand of the cook is almost invisible. We are always tsimply trying to just bring out the best flavor we can in everything we touch… we taste and taste and taste and that is how we cook….

What the job is like
You’ll work on the line during prep and service, help keep your station clean and dialed, and be expected to show consistency, urgency, and focus. This is not a stand-around job. It’s for someone who likes being engaged, learning by doing, and becoming genuinely excellent at the craft.
What you’ll do
• Set up and break down your station with speed and attention to detail
• Prep ingredients cleanly, efficiently, and consistently
• Cook and plate food to the restaurant’s standards
• Communicate clearly with chefs and teammates during service
• Keep your station stocked, organized, and clean at all times
• Follow food safety and sanitation standards
• Help with receiving, storage, cleaning, and general kitchen tasks as needed
• Show up ready to work, on time, every time
What we’re looking for
• Kitchen experience is great, but attitude, work ethic, and willingness to learn matter just as much
