Job description
Job Title: Head Baker
Location: Coney Island, Brooklyn, NY
Pay Range: $23 - $25 per hour, based on experience
Schedule: Sunday – Wednesday; 4:00AM - 12:00PM (Schedule flexibility offered, holiday availability as needed)
Cyclone Bagels is a neighborhood bagel shop in Coney Island focused on fresh, same day sourdough bagels and pastries. We invest in our local community and take real pride in quality, consistency, and craft.
We’re looking for a hands-on Head Baker who loves bread, leads by example, and can deliver the first fresh batch of bagels and pastries by 7:00 AM every day. This role runs the bakery floor, keeps production on track, and builds a strong, reliable team.
What You’ll Do
- Run daily dough production from mixing through baking, following precise time and temperature targets
- Adjust ovens and mixers to keep every batch consistent in texture, color, and crust
- Produce and oversee bagels, pastries, spreads, and prepared items to recipe
- Weigh and scale ingredients accurately and keep clear batch and yield records
- Keep displays stocked with fresh, properly labeled product in sync with front of house
- Maintain a clean, safe, audit ready kitchen and enforce food safety standards
- Reduce waste through smart scaling, rotation, and par level control
- Manage ingredient and product inventory and place accurate, timely orders
- Plan daily production based on sales trends and projected demand
- Communicate needs and issues quickly with the Director of Food Operations
Lead the Team
- Train and mentor bakers and cooks on technique, quality, and speed
- Create clear expectations and a positive, accountable kitchen culture
- Direct the flow of work during busy periods and step in wherever needed
- Support scheduling and cross training so the team can cover all shifts
Requirements
- 3+ years baking artisan bread or pastries in a professional kitchen
- 2+ years leading or supervising a kitchen or bakery team
Strong math skills for measuring, scaling, and yield control
- Comfort using commercial mixers, ovens, and proofers
- Ability to lift up to 50lbs and stay active on your feet for a full shift
- Food Handler’s Certification
- Degree in Hospitality or related field (preferred, not required).
