Just as we were, our animals are born & raised in the Finger Lakes Region of New York. Our natural beef, pork and chicken are antibiotic and growth hormone free and come from farmers that care. Good folks who nurture their animals so they grow to be the best they can be.
We (and our partners) can grow the best of the best but a marginal butcher, packer or shipper can leave you serving your family something less than stellar. From the farm to the butcher to your doorstep - we “own it”. Literally and figuratively. This ensures that the care we take on the farm comes through to your table. We have our own aging and cutting facility. Meat is aged until it is perfectly tender and then cut to order and vacuum sealed by our expert butchers. Using our own trucks, the fresh ultra-premium cuts are then shipped quickly to your doorstep.
Job description
Position Overview:
The ideal candidate has Whole Carcass Butcher experience, but we are willing to train the right person to join our team. This role involves breaking down entire animals (beef, pork, and potentially poultry), producing retail cuts, and contributing to value-added products. The ideal candidate is passionate about traditional butchery, detail-oriented, and committed to minimizing waste.
Key Responsibilities:
Break down primal and subprimal cuts
Fabricate retail-ready portions with precision and consistency
Utilize the entire animal (boning, trimming, grinding), including offal and secondary cuts
Maintain cleanliness and sanitation in accordance with food safety standards
Properly store, label, and rotate inventory
Package & label product
Collaborate with team members to ensure efficient workflow
Qualifications:
Ability to multitask
Excellent attention to detail, organizational skill and pride in craftsmanship
Team-oriented with good communication and time management skills
Ability to lift heavy loads (not to exceed 60 lbs) and work in a cold environment (coolers, freezer)
Ability to bend and lift repeatedly for extended periods of time
Ability to perform repeated actions for extended periods of time
Ability to stand, bend, stoop, reach, squat and walk for extended periods of time per shift.
Preferred Qualifications:
Proven experience in whole animal butchery or meat fabrication
Strong knife skills and knowledge of meat anatomy
Understanding of food safety and sanitation practices

Early start time and out at 2:30 daily
Competitive pay, $20-$28/hour based on experience
