Stylus is an acoustic salon for cultural exploration in the heart of the Lower East Side. Conceived as a world class sonic environment, it is home to ephemeral artistic experiences that will foster conversation, contemplation and connection. With an architectural space both intimate and adaptive, Stylus will bring together thought-leaders and innovators from the worlds of performance, science, technology, music, film and food. Conceived in collaboration with the world’s leading audio experts, a variety of listening rooms will host talented vinyl “selectors” and unique live performances. A recording and podcast studio with a green room is also accessible to members and their teams. Seasonally inspired, locally sourced small plates will be prepared by our in-house culinary team, helmed by Michelin-starred chef Anita Lo and an international rotation of visiting chefs.

Job description

The Sous Chef helps to manage the daily operations of the restaurant kitchen including events, leading lunch/dinner service, ensuring top quality food production, menu execution and efficient workflow. Key responsibilities include leading and training kitchen staff, controlling food costs and inventory, receiving deliveries, and maintaining a clean, safe, and organized kitchen environment to support the culinary director’s vision under the direction of the Chef de Cuisine.

Oversee Daily Kitchen Operations:

-Assist in training, scheduling, and managing of all cooks and dishwashers

-Ordering and maintaining quality of ingredients

-Assist with menu changes

-Oversee cleanliness and health department code compliance

-Oversee consistency and quality of menu item execution. Line check/tasting for each service worked.

-Daily, weekly & monthly inventory

-Assist in execution of events

-Execute saute station and expediting during night service when scheduled

-Oversee storage organization and cleanliness, including dry storage, walk-ins and lowboys

-Oversee daily production of family meal

Qualifications:

The Sous Chef must have fine dining kitchen management experience and strong knowledge of Asian ingredients and cooking techniques. Culinary pedigree from well-known chefs is a must. We are seeking a detailed, passionate culinary professional with strong organizational and leadership skills. Must have Food Handler’s Certification from the NYC DOH.

Physical Requirements:

Ability to lift 50lbs+
Safely and effectively use all necessary tools and equipment
Stand and walk for an entire shift, including moving safely through all areas
Ability to physically maneuver through work areas; bend, lift, carry, reach/extend arms, and hands above shoulder height frequently, or otherwise move in a constantly changing environment."

Compensation

this position is: salaried, varies DOE, $70,000.00 - $80,000.00
