Kitchen Manager Job Description
Primary responsibilities include, but are not limited to: preparing delicious, nourishing food and supporting the Cafe & Kitchen Staff in collaboration with the leadership team.
Menu and Recipe Management
- Cooking soups, preparing menu ingredients, and making baked goods and items for the grab-and-go
- Creating seasonal menus that change twice per year highlighting fresh and local ingredients including: Breakfast and lunch menus, Catering menu, Specialty catering menus as needed
- Developing standardized written recipes for soups, prepared foods, baked goods, and menu items
- Maintaining clear records of all recipes in the filet app and on recipe cards so that other team members can prepare them as needed
- Checking prices for ingredients and menu items monthly and updating in filet app, retail edge, and menus as needed
- Ensure that all cafe and prepared food items are properly entered into the POS system (RetailEdge)
- Ensure that all prepared food items have appropriate labels, with allergen ingredients in bold
- Ensure that all cafe and prepared foods have proper signage
- Creating a weekly prepared foods prep plan taking into account the previous week’s sales, special events and sell by dates
- Creating a weekly plan for foods packaged at RH, but not made in house
- Placing wholesale orders
- Coordinating with produce buyer on shared items
- Ensuring appropriate linen supply with our supplier on a weekly basis
Catering, Events and Outreach
- Managing catered events onsite with a goal of 1 to 2 per month for the first year
- Managing to-go catering orders
- Promptly responding to catering and event requests
- Working with catering clients to develop menus, give quotes, and meet their dietary needs
- Being an enthusiastic representative of Random Harvest in the community
Staff Training and Management
- Fostering a welcoming and collaborative staff culture
- Participating in the hiring process for kitchen staff
- Training kitchen staff on food safety practices
- Training kitchen staff on general food preparation, new menu items, and other areas as necessary
- Giving kitchen staff feedback on implementing and maintaining systems
- Checking in frequently with the kitchen team to ensure they have the support that they need
- Troubleshooting issues as they arise and calling in other team members as needed
- Be an active member of the leadership team
- Creating and/or adjusting systems to foster speed and efficiency
- Overseeing the organization, cleanliness and prompt maintenance of the kitchen and kitchen equipment
Financial Health
- Holding financial responsibility for operating a profitable food & beverage department to meet company objectives
- Developing sales & labor forecasts in collaboration with the leadership team
- Frequently checking costs on all recipes to ensure proper margins & pricing
- Participating in the annual budgeting process
- Participating in monthly financial check-ins
Terms of Employment
- Hourly rate of $21.00
- Tipped Position with tips averaging an additional $4-$6 per hour
- Full time position with an average of 40 hours per week
- Anticipated schedule 7:30-4:00
- Covering call-outs when needed
- Includes at least one weekend day and must be available holidays
- Being an on-call manager on certain days of the week
2 weeks paid vacation
- 1 week paid sick leave
- Ensure that staff are well prepared for manager absences
- Long term commitment of at least one year, ideally three years
- At least two months notice for ending employment or any major changes to the employment agreement
- Work to meet annual cafe gross sales goals
- Signed employment agreement including: conflict of interest, non-compete, confidential information and non-solicitation clauses
Compensation
this position is: hourly, $20/hr +
