Colette Bread & Bakeshop is a young, rustic neighborhood bakery in the heart of walkable Poncey Highlands. We are known for our naturally fermented breads and scratch pastry. Our menu evolves and changes with the season and we utilize local provisions wherever possible.
We are looking for a lead pastry baker who is ready to take real ownership of their section- someone who sets a high standard for their team, trains the people around them, someone who doesn't need to be managed to do GREAT work.
Job description
We are looking for a Lead Pastry Baker to help lead this team into the next step of our existence! Our Pastry Program includes galettes, danish, puff pastry, scones, biscuits, gougere, cookies, brownies, cakes, basque cheesecake, quiche, and more. Strong Skills in Basic pastry recipes and lamination is essential for this leadership position.
We are looking for folks with previous bakery/restaurant/pastry experience, with an eye for detail, a taste for quality, and a desire to lead a kind and passionate team.
What you'll Own:
- Day to Day pastry production across our menu
- Consistency + quality across every item before it hits our retail shelf + wholesale boxes
- Par sheets, prep planning, and wholesale item oversight
- training and supporting our junior bakers and shift leads
- Keeping your section and kitchen clean, organized, and efficiently running
Typical day
4:00 – 8:00am | Bake-off
8:00am – 12:00pm | Prep work and delegation
12:00 – 1:00pm | Cleanup and organization
Preferred Technical Skills:
- Flaky Dough, Danish Dough, Puff Dough, Scones, Biscuits, Cookies, Brownies, Cakes
- Oven Management
- Portioning + scaling to with par with consistency
- Food Safety + Kitchen Sanitation- Food Safety Certification a plus
Leadership + Ownership :
- Takes full responsibility for the pastry section — quality, cleanliness, team readiness
- Identifies what needs to happen and does it — doesn't wait to be asked
- Holds a consistent standard for themselves and the people around them
- Speaks up early when something is off — product, process, or team dynamic
- Trains junior bakers proactively, not just when assigned
- Can make good judgment calls when leads or owner aren't present
- Treats recipes, par sheets, and quality expectations as non-negotiable
IDEAL CANDIDATE:
- 2+ years in a professional pastry kitchen
- You've led or mentored others — formally or not
- Early mornings feel normal to you
- Available at least one weekend day (both preferred)
- You thrive in a small, close-knit team with a real sense of craft

*Pay is Based on Experience. A training rate applies for the first 2 weeks with an automatic increase and tip payout after that. At 60 days, performance is reviewed and a pay increase is assessed
Compensation
this position is: hourly, varies DOE, $18.00 - $22.00
