Job Description

The Little Gem Restaurant is part of the Wellsville Creative Arts Center, a cultural center for community art and education. The WCAC includes a school for art & ceramics, a music venue. a restaurant and Cafe. Our culinary mission is to provide fresh, delicious and artistically prepared food sourced locally and seasonally when possible. We serve full course dinners in a relaxed and casual setting and feature a large variety of locally-produced wine from the Finger Lakes region of New York State. We are looking for a HEAD CHEF / MANAGER who is inventive, resourceful and enthusiastic. The candidate would oversee all food operations for both the Little Gem Restaurant and Art Center Café. The Head Chef will direct all food operations at the Little Gem Restaurant and the Wellsville Creative Arts Center. The chef will lead and assist all prep, cooking, operations and profitability of the Little Gem Restaurant.  

QUALIFICATIONS
Prior experience required in skilled food preparation and fine dining restaurant cooking. Broad knowledge of cooking styles and menu items.  
Knowledge of all food safety procedures and fabrication. Highly organized, detail oriented team player with excellent leadership skills. Independent and motivated self starter that is also able to follow detailed directions. Basic computer skills – E-mail, internet, excel and word. Ability to work within time constraints and meet deadlines on a daily basis. Dedicated to task completion and the ability to multitask with frequent interruptions. Open minded attitude and a desire for continuous improvements. Flexible and available to work additional hours when necessary.  

DUTIES AND RESPONSIBILITIES
Responsible for all food operations at the Wellsville Creative Arts Center and Little Gem Restaurant. Menu planning, development, costing and waste/loss tracking. Responsible for all cooking, food plating, presentation, prep and butchering. Accountable for labor costs, scheduling, budgeting and tracking Coordinating operations and front of the house activities all in a timely and consistent manner. Coordinate, plan, prepare and cook for special events as needed. Estimating food needs and monitor inventory levels. Create the pull, order, buy and prep lists weekly. Responsible for the general sanitation, cleaning, maintenance and housekeeping of the kitchen. Responsible for cleanliness, organization and maintaining coolers daily. Check in, organize, maintain and track inventories of food items, refusals and back orders. Adhere to all labeling and food storage policies for leftovers and uncooked products. Adhere to and update check lists for all daily operational and cleaning needs. Train employees in proper food handling, food preparation and cooking as needed. Create, update and maintain records for menu items prepared, served and supplies needed. Continue to standardize operating procedures to improve efficiencies and profitability. Assist with lunch prep and cooking when needed
