Our new internship program is suitable for those currently enrolled in a culinary arts/ baking-pastry program but could also be suitable for graduates or experienced restaurant professionals. This is a hands-on internship in our busy test kitchen. The test kitchen intern will be responsible for production within a designated publication: Cook's Illustrated magazine, Cook's Country magazine, cookbooks or our photo team. The intern will rotate to a new publication every 6 weeks, allowing them to work with 2 teams during their 3-month internship, with exception to our filming seasons (May, September) when interns may be assigned to assist with our shows.
Interns will work daily with test cooks and editors in researching recipes, preparing
mise en place, and performing cooking tests. An intern may also help out during photo shoots by prepping ingredients, making recipes and gathering equipment. The intern may also help with evaluations of kitchen equipment and ingredient taste tests.
The intern will be expected to train quickly and effectively on our kitchen policies and procedures. He/she will assist our two Senior Kitchen Assistants with check in and distribution of daily shopping ingredients and be responsible to report on kitchen tasks; including but not limited to: cleaning and organizational tasks, maintenance and calibration of equipment, prep/cooking for in house catering events, dishwashing and trips to our local grocery store if necessary.
Interns will be eligible to participate in a research project halfway through their internship period. This project is designed to simulate the work of a test cook through research and experiments.
