Job description
Pugs Leap is looking for an experienced cheese maker to join and lead our passionate and hard working cheese team. Pugs Leap is a small artisan farmstead cheese operation. The creamery is located right on the dairy, White Whale Farm, where we milk 120 happy and healthy goats all year round. The position’s work schedule is based on a 5 day work week but might include some work on weekends and holidays though we do the best we can to accommodate everyone’s schedule needs. This position is a full-time working manager position, which includes cheese making as well as supervising the rest of the staff.
Duties and ResponsibilitiesFood Safety

Assist with implementing HAACP program

Employ best-practices and procedures for the dairy to ensure regulatory compliance, food safety, employee safety, product quality, efficiency, and cost control

Oversee and implement environmental sampling plan
Cheese Production & Creamery Management

Manage staff, create schedule and assign daily tasks

Work closely with Herd Manager to coordinate cheese making with milk production

Manage daily production of high quality artisan cheese

Assure quality control and consistency of products

Manage accurate production records (pasteurization charts, make sheets, all production logs etc.)

Manage inventory of supplies and ingredients

Assist in development and management of the annual cheese plant budget and operate within that budget
Experience:
-
Minimum of 2-3 years of work experience in a creamery;
-
understanding of raw milk quality, dairy microbiology and dairy chemistry;
-
experience with production of artisan cheeses;
-
experience problem solving cheese recipe changes throughout the changing seasons;
-
practical knowledge of food safety and GMPs;
-
ability to work with others in production space and lead a team of people;

passion for producing excellent, high quality cheese.
