Quixote Expeditions is an American Expeditionary sailing company that runs intimate sailing trips in the Southern Ocean. The trips start and end in Ushuaia, Argentina, and we primarily run our trips on the yacht Ocean Tramp in locales such as Antarctica, the Beagle Channel, the Falkland Islands, and Isla de los Estados. The yacht holds up to 8 guests and 2-4 crew and/or guides. The trips are experiential in nature, as everyone, including guests lend a hand. Everyone joins in holding watches, doing dishes, and equally taking in the amazing landscapes that surround us.
Quixote Expeditions believes strongly that travelling to these amazing places also brings responsibility. Quixote Expeditions strongly supports science and on all of its longer expeditions it saves one bunk for a Guest scientist to perform research during the trip. Internship description
Responsibilities:

Cooking 3 healthy meals a day for groups of 10-12 (guests can / will assist with chopping dish washing etc)

Prior to Crossing the Drake preparing finger foods that will last for 4 days and can be eaten during the Drake passage

Assisting in creating the food list & shopping for the expedition

Keeping the galley clean and tidy
-
Standing watch at the helm during the Drake passage (no sailing experience required)

Assisting where needed around the boat – helping with the lines, helping with cleaning, etc.
Job Details
Location: Ushuaia – the trip starts and ends in Ushuia and the trip prep and cleanup will be in Ushuaia. The majority of the internship will be at sea on Ocean Tramp, en-route or in the Antarctic Peninsula.
Working Hours: When in Ushuaia one can expect to work 8-10 hours days preparing the boat. Once at sea the intern will have the freedom to manage their time in a manner so that the meals are prepped and ready on time. There are no weekends or days off during the internship. The intern will be allowed some hours of free time to explore Ushuaia during the prep days.
Dates: ~Dec 10, 2016 – Jan 10, 2017 & 10 Jan 2017 – Feb 26 2017. Candidates are welcome to apply for the whole period or only one period. Dates subject to change by a few days.
Special Demands:

Cooking space is limited to a galley which includes a 4 burner gimbaled stove, minimal counter space, and minimal powered appliances

Living and working in a small communal space for up to 30 days

Working in a cold maritime environment (note the inside of the yacht is well heated and always warm)

Communications once under sail will be minimal. The vessel has satellite phone and sends updates and positons. Access to the internet is not available onboard once under sail
Qualifications & Experience

High School diploma
-
Minimum 1 year of College in a Culinary program, ideally at least 2, although those with 1 will be considered.

Ability to cook for groups of 10 – 12 on a daily basis

Basic knowledge of kitchen hygiene

Self starter

Some outdoor experience – hiking, sailing, kayaking, etc

Healthy, fit, and can be away from medical facilities for up to 30 days (note prior to starting the candidate will need to provide a medical form signed by a doctor that they are fit for this expedition)

Remuneration: Unpaid, however the company will pay for the interns’ flights to Ushuaia, evacuation insurance. Room and board will also be provided for the length of the internship.
