Chef de Cuisine Mockingbird Hill

Job Description Mockingbird Hill is a Sherry bar influenced by the small Sherry bars in Madrid and the south of Spain. We're Spanish-influenced but not to a fault. Mockingbird Hill is our own invention. We received two-stars with a toaster oven from the Washington Post and, otherwise, have received national-recognition for our innovative beverage program. Now we need a chef to complete the other half. Our food program currently revolves around locally cured meats (some Spanish too) and small plates—small but mighty. We love local purveyors and seasonal food. 

We’re looking for a full-time chef who can oversee kitchen operations in a small prep kitchen; order and prepare a variety of food for meal services; work shifts during meal services, executing composed dishes; prepare monthly inventory and participate in weekly manager meetings; stock food items and rotate inventory; maintain a clean work environment and otherwise oversee all duties pertaining to the operation of the kitchen. Chefs should have experience working in kitchens as a lead line cook or sous chef, a flexible schedule and be able to lift 50 lbs. But, mostly, we just want someone who loves cured meats and local proteins and produce and can turn them into a great food program. 

We're currently open for service at night but are adding a day-time program with coffee and sandwiches. Compensation this position is : salaried How to apply
