On-Farm Butcher Mace Chasm Farm

Job Description This position is in our small, on-farm 20C Butcher Shop here at Mace Chasm Farm. We are mainly butchering animals that were raised right here on the farm & we direct market our meats & eggs to our local, rural population here in the eastern Adirondacks through Farmer's Markets, our Winter Delivery Route, and stop-in sales here in the shop. We rotationally graze Katahdin sheep, Devon beef, heritage breed pigs, layer chickens, and meat chickens. The farm & shop are run by a small crew - anywhere between 3 & 6 people, depending on the time of year, and we are BUSY, hard-workin people! In these early years of this business, we miss the hiking, dance parties, swimming, and visits to friends that we used to have our weekends for! That said - our co-workers (employees & interns) take 2 days off per week, and we are working toward a day off per week ourselves.

Weekends are our market days, and we butcher from Tuesday through Thursday. The farm also runs a Food Truck that serves up our meats along with neighboring veggies, cheeses, brews, and breads. The Food Truck goes to market to serve prepared foods alongside the farm tent, and also does special community or private events, and Taco Night on Thursday evenings during the Summer here on the farm. We live in a very rural, vibrant little young farming community, and are passionate about producing healthy food for our local population while taking good care of the land that we use. We love the Adirondacks. This is where Asa is from, and he knows the mountains well. 
    
We are looking for someone with some knife skills, ideally -  with at least enough experience in butchery to know that you love this work, and are driven to improve. We'd like to find someone who  is:
  • efficient & focused - there are so many distractions on the farm; 
  • who enjoys customer service & sharing insight into the products we're offering;
  • who is organized, tidy, attentive to details, and mindful toward the maintenance of shared space & tools;
  • who enjoys working and making improvements every week to the spaces and processes we use; and who is handy!  

The most important credential is a good attitude toward problem solving, toward the choreography we do here between processing work & farming, and toward the challenges of establishing good communication with co-workers. This is a new business - we're in our second year here and are still figuring out many systems large & small here on the farm, so it is important that people here be creative, pro-active, and patient toward setting up the 'systems' that will meet team & individual needs - which can be a satisfying process with the right approach!
    
The Butcher Shop position here is during the weekdays - we (2 to 3 people) are really crankin in the shop Tues or Weds - Friday. We make around 200 lbs of fresh sausages per week, and usually have several pigs or lambs and a half a cow on the rail to cut for the weekend markets. We're open to a part-time butchering position three days a week, or a full time position that potentially includes some farm work, some Food Truck work, or some office work, depending on skills & interest on your part. We offer some on-farm housing. We do have local mentors who come & cut with us occasionally to answer questions & teach where we lack, so beginning level butchers are welcome to get in touch.
