Mt. Townsend Creamery Cheesemaker

Hours:  Full time, 35-40/week

Description:

Cheesemakers are responsible for the manufacture and aging of all Mt. Townsend Creamery cheese from make to packaging, while meeting all safety, food safety, and quality standards outlined by MTC.

Responsibilities:

  • Cleaning and sanitation of cheesemaking environment, equipment and utensils.
  • Preparation and addition of starter and ripening cultures.
  • Preparation of cleaning and sanitizing solutions.
  • Operation of cheesemaking equipment, including milk pump, cheese vat, press, and brine tank.
  • Control and monitor of make room and aging room environment conditions.
  • Record and maintain cheesemaking observations and anomalies.
  • Daily tending of cheese in ripening and aging rooms.
  • Daily checks of ripening room environment conditions.
  • Assist in troubleshooting product quality issues.
  • Assist in maintenance of production facility and equipment.
  • Daily management of wastewater treatment system.
  • Preparation of make sheets and accurate record keeping for all batches.
Requirements:
  • Minimum of 18 years of age.
  • Able to lift 50 pounds repeatedly.
  • Able to stand for extended periods of time.
  • Able to visually inspect cheese for quality control.
  • Willing to remove any exposed jewelry while working.
  • Basic computer literacy (MS Word, Excel, Outlook).
  • Able to work flexible hours, including weekends and early mornings.
  • Must not be advised by a medical professional to avoid working in a food service environment.
  • Must not be infected with any communicable disease which is of special concern for the food service industry (examples include, but are not limited to Hepatitis, Shigella, E. Coli, Salmonella, Giardia).
