Helmed by two Brooklyn-based restaurant veterans with a proven track record in NYC dining and hospitality, this 50-seat Brooklyn wine bar with an open kitchen is looking for a passionate, driven Head Chef to launch its culinary program and oversee all BOH operations for its mid-June opening.

The founding partners have extensive forward-facing experience building world-class wine programs for some of NYC’s top wine destinations. Combined with their elevated and warm approach to hospitality, they seek to join forces with a Chef to launch a food program that compliments their natural and low-interventionist wine program and elevates the typical wine bar experience.  

 

Job description

The Head Chef will oversee all operations related to the kitchen and BOH staff throughout the opening including:

  • Creation of the opening menu with a focus on wine-friendly, vegetable-forward food offerings,  sustainability, seasonality and local purveyors
  • Oversee regular menu changes in line with seasonal availability post opening  
  • Manage day-to-day ordering
  • Hire and manage an opening team of approx 6 BOH staff including 1 Sous Chef
  • Oversee the BOH schedule
  • Responsible for meeting all financial objectives including food cost and labor expenses
  • Ensure DOH standards are continuously met; responsible for an “A” rating from the Health Department
  • Prioritize food presentation ensuring consistent, beautiful high quality offerings on a daily basis
  • Ensure all BOH staff are trained on proper food prep and kitchen safety techniques
 

About You

  • 5-7+ years kitchen experience
  • 2+ years of BOH management experience
  • Prior experience in menu/recipe development
  • Possesses existing relationships with local purveyors and is passionate about sourcing sustainably and seasonally
  • Strong culinary background; previous experience in high-volume NYC restaurants and understanding of culinary climate
  • Able to work ten hour-plus shifts plus ability to stand, sit or walk for extended periods
  • Able to grasp, lift and/or carry up to 50 lbs as needed
  • Food handlers certificate
