Production Assistant & Market Staff Sowbelly Butchery

Company description Sowbelly Butchery is a farm based butchery business in Jefferson, Maine.  We operate at the intersection of producer and processor to provide seasonal sausages to farmers market venues.  The meat is raised here on our family farm and since we sell more sausages than can raise animals in this growth phase of our farm, we occasionally source whole pigs to supplement. Additionally, in partnership with selected fellow Maine farmers, we source whole grass fed lamb and grass fed beef quarters. Our goal is holistic health for the critters, land and farmers, thus we practice whole animal butchery to utilize every morsel in our other products.  Sowbelly Butchery is beginning it's third year of production on the farm and in the butchershop and has been received with much favor locally.  We offer an array of experience with animals on the ground and on the butcher block.  Job description

This position focuses on sausage production 2 days weekly in Jefferson and attending the Thursday market in Rockland, ME to amount to 20-30 hours weekly. At times, this position works closely with the owner and individually for some tasks. More types of opportunity within this growing business possible for the right individual. We'd welcome employees also interested in livestock care in our pastures and woodlot. All applicants will be considered; we encourage individuals of any gender, veterans, formerly incarcerated, queer and LGBTQ, new American, entry level and previously vegetarian applicants.

Sausage production includes:

  • following recipes to weigh & prepare ingredients
  • Grinding meat, linking, wrapping, packing & labeling
  • washing plenty of dishes
  • Closely following food safety mandates

Selling at farmers markets includes:

  • Set up & break down of tent, tables, signage & coolers
  • Customer service for frozen meat sales & explanation of product
  • Operating a POS/ register system
  • Engagement with customers and fellow vendors
 

We expect to train someone who shows interest in committing to our season through October.  Foundational attributes include 

  • willingness to learn
  • desire to achieve consistency and efficiency
  • communicative about own needs & questions
  • able to lift 50lbs or 25 lbs twice & work on their feet
  • have a valid driver’s license
  • can work closely with the farmer or independently
  • flexibility to work closely with a small family farm and growing business
  • Reliability to fulfill expectations daily

A little common sense, a healthy sense of humor, respect for food safety and passion for local agriculture and community economy go a long way too.  Previous related experience on farm, retail food sales or food prep is favorable. A personal passion for this kind of food is helpful but ultimately, not as paramount as the right attitude.  We're a small but growing business with flexibility for a well suited candidate.
