Job description

HEAD BAKER, TALULA’S ASBURY PARK

We are currently hiring a full-time Head Baker at our lovely sourdough pizza restaurant, bakery and bar on the Jersey Shore. We make sourdough pizza, naturally fermented artisan breads and pastries with organic and local flour every day. We are looking for someone who can work both independently and with a team and who is committed to producing high-quality, consistent work. We’re looking for someone who has experience leading a team, training, developing, and inspiring individuals to be their best!

The Ideal Candidate Requirements:

  • 2+ years professional bread baking experience
  • 1+ years experience managing a team
  • Pastry production experience
  • Recipe development and food costing
  • Comfortable working with both naturally leavened and yeasted doughs
  • Passionate about baking with whole grain flours
  • Respectful, positive, team-oriented attitude with a problem solving mindset
  • Ability to motivate baking team to efficient work pace and high quality output
  • Committed to maintaining and improving product quality, work pace and team morale over time
  • 5am start time availability
  • Weekend and holiday availability

Job Responsibilities:
  • Oversee all aspects of bread and pastry production
  • Responsible for maintaining production schedule and product quality
  • Mix, shape, bake multiple types of sourdough and yeasted breads daily
  • Pastry production includes cookies, biscuits, pies, ice creams, cakes, breakfast breads, laminated pastries, etc, including many vegan items
  • Mix and shape sourdough pizza dough daily
  • Oversee and expand our Bread Club and wholesale bakery programs
  • Prepare family meal for entire restaurant team once a week
  • Comply with all local, state, and federal health and civil code regulations
  • Maintain housekeeping and sanitation standards on a regular, ongoing basis
  • Conduct inventory & ordering for food ingredients and kitchen supplies within established budget
  • Schedule bakers appropriately and, as needed hire & train new bakers to ensure smooth operations
  • Participate in performance evaluations to determine staff raises
  • Integrate new products into the production schedule as requested and conduct recipe costing
  • Inspect bakery equipment and complete regular maintenance, contracting with service technicians as necessary to ensure continued optimal functioning of equipment
  • Maintain strong communication with other restaurant departments, managers & owners
  • Collaborate with kitchen team on new items & specials using baked goods
  • Lifting 50+ lb, standing, navigating stairs, working in a kitchen with gluten and other allergens
