The Aviary is an upscale restaurant with modern Asian influences located within the Kinderhook Knitting Mill in the Hudson Valley (NY). We work alongside our farm partners in the region to provide seasonally driven food, and as such we feature a constantly evolving menu. Our sister cafe, Morningbird, offers a rotating selection of housemade pastries & casual Southeast Asian dishes for lunch.

The Kinderhook Knitting Mill is a creative & community-minded space in the heart of Kinderhook, NY that brings together food, art, and design in an 1870s textile mill. The ethos of The Mill is one of cooperation and collaboration with the shared goal of cultivating a thriving village center to support & nourish our neighbors throughout the Hudson Valley.

Job description

The Aviary Kinderhook is looking for a dynamic, experienced chef who seeks creative freedom and is capable of running a restaurant alongside ownership.

Responsibilities include:

  • Oversee lunch and dinner services, monitoring all team members progress and the flow of service
  • Capably work any line station as needed
  • Seasonally R&D menu items in collaboration with owners and other kitchen staff
  • Manage all culinary team members, assisting in hiring, training, mentoring, scheduling, and disciplining of team members
  • Oversee all prep to ensure all items and recipes are made to standard
  • Enforce proper food safety and sanitation standards
  • Monitor receiving to ensure all product received meets restaurant standards
  • Hand-shop ingredients as needed or otherwise unavailable via delivery
  • Work with owners to ensure food cost & labor cost expectations are met
  • Operate with humility and grace with staff and guests alike
  • Compassionately & clearly communicate with all team members, managers, and ownership
  • Most importantly lead by example!

Required Qualifications:

  • Ability to run an efficient service, including expediting
  • Ability to use computer (word docs, spreadsheets, email) for ordering, inventory, communications, 
  • Ability to successfully train new culinary team members
  • A positive and enthusiastic attitude, as well as a desire to learn, grow, and develop new skills
  • Excellent knife skills, food safety & sanitation knowledge
  • Excellent communication, organizational, and interpersonal skills
  • Ability to remain calm under pressure
  • Ability to lift 40lbs
