Prospect Butcher Co. is seeking full-time help! We’re looking for someone who’s down to butcher pigs, make sausage kits and pastrami brines, field questions about yuzu kosho and crepinettes, and help our dope customers with everything from cheek bacon to squab.

Your primary task will be to work side by side with our head butcher with whole animal breakdowns and cutting for the case, while also acting as a protein consultant to customers. You’ll coach them through how much of which cut they should purchase, walk them through cuts they’ve never tried, and make them feel confident cooking anything in the case.

There’s going to be lots of varied production too, not just cutting, including sausage stuffing, making bacons, hams, duck confit, etc. etc. etc.

We’re a small team in a small space; everyone needs to be willing to help out with the register, break down chickens, slice charcuterie, make sandwiches, wash a dish, and provide warm, personable service to (seriously) the best customers in the game. 

You need to:

  • Have had at least 1 year experience as a whole animal butcher
  • Be able to handle the physical demands of the role: standing for long stretches, lifting 40+ lbs., working with knives 
  • Be willing to jump in wherever help is needed; complete, scientific knowledge of butchery isn’t required, but a checked ego is
  • Be punctual and eager to learn
  • Be an avid home cook, ideally with some strong opinions on what one can do with a variety of cuts of meat
  • Be flexible - as a growing business, we're always developing new structures, recipes, and products. Collaboration (and all the authorship and frustration that entails) plays a big part in how we operate.
