OVERVIEW OF RESPONSIBILITIES & EXPECTATIONS
- Candidate must have at least 2 years of hands on cheese experience and be knowledgeable regarding cutting different cheeses, slicing meats, wrapping, different molds, proper storage - all things related to maintaining a healthy cheese and charcuterie counter!
- Customer Service – Keep customers thrilled and make sure all staff are providing the best possible hospitality, service that is both friendly and accommodating. Cultivate regulars.
- Create cheese and charcuterie boards to spec and with care and attention to detail. Create concepts for holiday and gift boards.
- Cheese & Charcuterie Care: Maintaining quality; creating bountiful displays with carefully portioned and wrapped cuts and with consideration for potential waste; and selling through cheese & meat backstock so as to maintain peak freshness.
- Training & Education: Train other FOH staff and future cheesemongers on our offerings and pairings, as well as proper cheese care. Educate staff on the background of our products to encourage engaging customer interactions.
- Weekly Cheese Updates: With the Lead Monger, send out weekly or bi-weekly cheese updates informing mongers and staff of new additions as well as useful information or fun facts about cheese.
- Price Checks: big-picture price checks, as well as price-check maintenance in between.
- Assist in ordering all cheese & charcuterie in a timely manner while maintaining adequate backstock.
- Assisting to maintain a master ordering template, changing/adding/removing products as needed.
- Ensure that all cheese & charcuterie have accurate signage and pricing.
- Enter products into the scale and Square Dashboard and Online. At the same time, eliminate redundant or old products.
- Backstock oversight- Keep tidy and well-organized. Make sure products are stored in proper categories and FIFO’d. Make sure all products are on the retail shelves.
- Oversee pack-outs - make sure to stock and adjust pars as needed.
- Must have a passion for all things cheese, charcuterie and artisanal food products!
