Giuseppe’s Pizzeria & Ristorante, a full service, festive Italian restaurant in the heart of Meredith, New Hampshire has been owned and operated by the Gnerre-Bourgeois Family since 1989.

 It has a lively, fun atmosphere that features live musical entertainment nightly along with its award-winning pizza, pasta, steak, seafood, chicken, vegetarian, vegan, gluten-free, salads, sandwiches, desserts, beer, wine, and spirits and features dining “Al fresco” next to the Waterfall at Mill Falls during the summer months.

In May 2010, Giuseppe’s expanded by opening a new room downstairs called “The Grotto” at Giuseppe’s. This room, located in the original foundation of the old historic Mill Falls Marketplace, formerly a linen mill from the early 1800’s, made of stone, brick, and wood, accented by canvas and wrought iron has an endearing charm to be enjoyed by all.

Job description

EXPERIENCED SAUTE CHEF WITH A PASSION FOR COOKING

Basic Functions:

Responsible for the kitchen cleanliness, preparation of food, and food made to order in busy, fast-paced environment.

This unique and popular family owned and operated restaurant is one of the Lakes Region's most loved since 1989. Noted for being "Very Musical, Very Italian, & Very Good!", Giuseppe's serves up award-winning classic Italian Pizza, Gourmet Pizza, Pasta, Seafood, Steak, Chicken, Veal, Sandwiches, Fried Food, Salads, Appetizers and Desserts along with live musical entertainment nightly.

Saute Chef will need to ensure that all recipes, food preparations, and presentations meet restaurant's specifications and commitment to quality.

Saute Chef is encouraged to be creative and is allowed to request ingredients in advance to prepare distinctive nightly specials.

Saute Chef must maintain a safe, orderly and sanitized kitchen and will demonstrates this by using proper food-handling techniques.

 

Essential Functions:

  • Prepare Saute's freshly made to Order on a 14 burner stove in a very busy environment. Prepare and Stock food stations relating to your position on the line and area will remain stocked during the meal period.
  • Follow all recipes and portions servings correctly
  • Make food to order as quickly as possible while maintaining quality
  • Make sure food looks and smells appetizing and delicious.
  • Organize food timing to coincide with the ticket timing of the other food Preparation areas.
  • Keeps kitchen areas clean and organized.
  • Perform additional responsibilities, although not detailed, as requested   by the Chef at any time.
  • Practice Food Safety and Waste Prevention.
Knowledge
  • Commitment to quality service, and food and beverage knowledge.
  • Knowledge of basic training techniques.
  • Awareness of local, state and federal health and sanitation laws.
  • Understanding of proper use and maintenance of major kitchen equipment, including stoves, refrigeration, slicer, knives, and dish machine.

Skills/Aptitudes

  • Adequate communication skills, oral and written.
  • Ability to work in a high-energy and demanding environment.
  • Organization and leadership skills.
  • Demonstrates strong work ethic and skills and is a team player.
  • Works well under pressure.
  • Can effectively solve problems.

Working Conditions

  • 90% of time standing and 10% of time sitting.
  • Kitchen temperature is hot during the summer months
  • Direct contact and involvement with front of house and back of house team
  • Set Schedule will be 5 to 6 days and or nights per week
  • Rate of Pay is negotiable and depends on experience level and prior jobs in restaurant field.
  • Housing provided for $75.00 per week within walking distance to restaurant
  • Dates of Commitment: May 15-October 15, 2017
